On the form's Availability tab, set the Operating Hours visitors can book.

Yes. On Bookings, then Bookings, you can check customers in when they arrive, including by QR code.

How far ahead can visitors book?

Set Advance Booking Days on each service's Scheduling tab. It is 30 days by default.

Can I sell a guided tour as an extra?

Yes. Guided Tour is already an add-on. Change its name and price, or remove it, on the service's Add-ons tab.
